Bunny Bread Bowl Dinner

My 20 year old niece came over for a cute and easy weeknight dinner. I was inspired by this but wanted it to be very easy so I bought two bread bowls from Panera Bread. I showed the cashier what I was trying to accomplish and he was helpful.

Salad – lettuce, carrots and ranch or vinegar

Cauliflower Cheese Soup – Boil cauliflower florets and make a 2 cup cheese sauce (double recipe). Add the cooked cauliflower and a little saved cauliflower water to the cheese sauce.

Bunny Bread Bowl – Panera bread bowl. Cut ears from the underside of the bread lid, and make a nose from the lid bread, dried cherry eyes – attach with toothpicks. We tried to use toothpicks to attach the head to the bowl but it worked better to just have the head sit on top.

Bunny Danish – I followed this recipe except that I did not add egg to the cream cheese.

Girls Day Hinamatsuri Dinner

Girls Day Themed Food

My 20 year old niece and I celebrated Girl’s Day (Hinamatsuri) together. We both got carried away taking photos because it turned out so cute! A majority of these photos were taken by my niece. We have celebrated Girl’s Day in some way a few times over the years but the last time we made a themed dinner was in 2013. Since she is graduating college in May and will no longer be living near me, this seemed like the perfect year to celebrate again.

Emperor:

  • Body – Onigiri (rice ball made with this) with spinach and Parmesan cheese inside
  • Head – Peeled radish with spinach face details and spinach hair (wilt fresh spinach leaves for a few seconds in the microwave), crown food pick – attach head to body with a toothpick
  • ClothesSpinach crepe, cucumber skin
  • Baton – Cucumber – attach to body with a toothpick

Empress:

  • Body – Onigiri (rice ball made with this) with cooked zucchini, tomato paste, and oregano inside
  • Head – Peeled radish with spinach and food coloring marker face details and spinach hair (wilt fresh spinach leaves for a few seconds in the microwave), crown food pick – attach head to body with a toothpick

My critique of the meal: Adorable, adorable adorable! I am the first to say when my edible food art does not turn out the way it did in my head. But this time, I was thrilled with how these looked! We both liked the Emperor’s filling (spinach and cheese) better than the Empress filling (zucchini and tomato paste). The cream cheese mints were pretty and delicious. This was a time consuming meal especially since I made two different types of crepes. But, I am the type of person who enjoys being immersed in a big cooking project. A successful meal!

Thai Inspired Vegan Dinner

Thai Inspired Vegan Dinner

Last Saturday, I invited my friends Carol and Deborah over for dinner and Scrabble. I tend to only invite one friend over a time so it was a nice change to invite two different friends over on the same evening. Since I am a vegetarian and Deborah eats vegan, I decided to make a vegan meal for all of us. I was concerned about the salad since it seemed unusual but I loved the combinations of everything in the meal. It was also my first time making vegan truffles; it will not be the last time! They were easy and delicious.

Cucumber Pineapple Salad Thai – I used some chives instead of spring onions and only a few fresh basil leaves that I served on the side. I used cashews instead of peanuts. I did not use the coriander, garlic, red chili, brown sugar, or shrimp paste. For the dressing I simply used 2 TBS soy sauce and the juice of a lime.

Thai Peanut Sauce over Roasted Sweet Potatoes and Rice – I used maple syrup instead of honey, and did not use the garlic or red pepper flakes or bell pepper or any of the garnishes

2 Ingredient Dark Chocolate Truffles – I used a Loving Earth Bean to Bar Dark 2.5 oz chocolate bar (it is made with coconut sugar) and did not use vanilla. I rolled the truffles in cocoa powder. (I made a third of this recipe).

My critique of the meal: Everything was delicious. After dinner, I felt very satisfied with the flavors and how my body felt. It was not a spend the whole day in the kitchen meal. The only thing that was make ahead, was the chocolate truffles. I did struggle with how to plate them and asked my friends for help. Deborah came up with the idea of using the orange. We think the problem was too many round things on a plate and at first I only had 2 truffles on the plate (the serving I gave us). Also maybe another time I will try a cocoa powder stencil on the plate.

Vegan Vegetable Trio

A few weeks ago, my friend Deborah came over for lunch. When I told her my plan was to make a vegan stacked vegetable trio, she said she could make a vegan layered dessert. I love menu planning and took on the challenge of making a special plant-based trio. I used the same dishes that I originally purchased for my Christmas dessert trio.  Deborah and I ate a beautiful and delicious feast! It was a warm day for February and it was delightful to go for for a walk after the meal.

Tortilla Stack – Homemade tortilla chips (cut flour tortillas with a cookie cutter, brush both sides with a little olive oil and bake in a 350 degree oven for about 10 minutes or until lightly browned and crisp), layer tortilla chips with hummus, chopped avocado and chopped red pepper, fresh spinach leaves add color at the bottom of the stack.

Balsamic Roasted Zucchini and Eggplant – Cut zucchini and eggplant into 1/2 inch rounds, brush with a mixture of olive oil, balsamic vinegar and a minced garlic clove. Roast at 450°F (turning half way) until tender – about 25 minutes.

Baked Potato Slices with Pesto – I used this potato recipe without the salt-free seasoning blend. Before serving, I spread vegan pesto between the potato slices.

Tiered Chocolate Cupcake – Deborah used a fluted cookie cutter to cut a vegan applesauce chocolate cake. Then she spread an apricot coconut filling between the layers. The drizzle is a strawberry tangerine tofu sauce.

My critique of the meal: Of the trio, my favorite was the tortilla stack with the potatoes being a close second. I had considered making a white bean garlic puree to serve under the roasted zucchini and eggplant but decided not to do it at the last minute. It was delightful to eat Deborah’s beautiful and delicious dessert. I think it was a memorable meal.

One time when I told my young nephew that his dog tackled me, he told me that I was not tackled since I did not fall down. Thinking of that time makes me smile.

Happy Valentine’s Day!

I am a planner. Since having a blog for nearly 8 years, it has become normal for me to celebrate some holidays ahead of the actual holiday. In January, while planning what I would do on Eclectic Lamb for Valentine’s Day, at first I was at a loss. I did not anticipate having a Valentine this year. Then I came up with the idea of making breakfast for my friend Renae and her family. It was enjoyable to prepare the food and bring it to them on a Saturday a few weeks ago. The delicious aroma of freshly baked cinnamon rolls filled my car as I drove to their home. I was very happy to share the love to a deserving family who has always been there for me.

Heart Shaped Cinnamon Rolls – I served some rolls with icing and some without.

Fruit Kebobs – Strawberries, apples cut with a cookie cutter (dipped in water with lemon juice to prevent browning), kiwi cut with a cookie cutter (I attached stickers to the top of bamboo skewers)

I texted photos of tweaks and she gave critiques. The shadow may still look like a dead groundhog but not as much as my first try. Sweet Potato Gnocchi Dinner

My friend Carol joined me for a dinner of homemade gnocchi and a game of Scrabble. I decided on gnocchi because I still had not used my gnocchi board. Now that I have used it, I want to use it again. It was fun!

My critique of the meal: My gnocchi dough was slightly soft since I was overly concerned about making them too hard. I had to use extra flour with my board (shown in photo above) but they were still delicious! The roasted asparagus was enjoyable. I neglected to photograph our dessert but it was attractive and satisfying.

After reflecting on the events of the year, I would say that not much changed in my life in 2018, except for the death of my Grandmother. While living, she caused a lot of stress for the people around her. Her departure alleviated some stress especially for my parents. I prepared a special meal the night before the funeral and am happy with how it turned out. It is my favorite blog post of the year since it is very real. I share recipes and my eulogy. I took a difficult situation and made something beautiful, delicious, and memorable.

I am looking forward to 2019. I have no idea what I will experience, create and share. It will be interesting to see what happens.

7 Continents Dinner

7 Continents Santa Around World Dinner Table

This year I decided to host a 7 Continents Dinner on Christmas Day. The theme was A Culinary Trip with Santa Around the World. Adults can enjoy the spirit of Santa with kindness and food from around the world. My parents, friend Carol, and her adult son Mike attended the meal. I spent a lot of time thinking and planning over the last few months. My goal was be better at plating and table decor than in the past. There is always room for improvement but I think that I achieved my goal.

Table Decor

  • I like the look of place mats on top of a tablecloth.
  • These centerpieces were low and perfect for the table. My friend Carol gave me some holly to put on the table.
  • I made the jingle bell napkin rings with jingle bells and wire. It would be safe if you used thin elastic but my adult guests did not get injured.
  • I bought the Christmas Crackers from Marshalls. It is a family tradition to have them on our Christmas table.
  • I made the Mt. Fuji chopstick rests from clay and a Mt. Fuji cookie cutter. I baked them for about 15 minutes.
  • Earth – 7 Continent Dinner Rotating Earth Menu. (If I spent more time on it, 2 pages would fit on 1 page and there are other improvements I would make. I am including the word document here if you want to modify it for your own purposes.) I came up with the concept months ago. It is possible that my co-workers and everyone I know are tried of my talking about my menu cards. It is not perfect but my guests enjoyed turning the wheel to go to the next continent and read about the next course. I bought the silver place card holders at Michael’s.

Menu

I planned the menu to include some make ahead and freeze and make ahead and refrigerate items. I made the gyoza a week ahead and put them in my freezer. The peanut soup was made a day ahead and refrigerated. The fruit sorbet was made 2 days ahead and stayed in my freezer. I scooped the sorbet and put it in mini serving glasses and put them back in the freezer a few hours before the meal. I made the empanada filling and dough the day before my meal. We took a break after the 4th continent so I could prepare and bake the empanadas. I only needed to cut and plate the cheese course. I baked the reindeer cookies 2 weeks before and froze the pieces. I frosted with caramel buttercream the morning of the party and assembled while plating. The chocolate cake was baked the day before. It was cut and frosted a few hours before the meal. I baked the cheesecakes the day before. I added whipped cream and strawberries a few hours before the meal. Everything was under control (I even had a guide for myself to tell me how to plate each course), I thoroughly enjoyed it and feel that it was a success!

ASIA – Appetizers

Vegetable Gyoza – I made my own with store bought dumpling wrappers. I shredded cabbage, carrots, snow peas, scallions, and fresh ginger separately in my food processor. I added sesame oil and soy sauce.

Served with Trader Joe’s Gyoza Dipping Sauce (sprinkle of sesame seeds) and edamame in the pod.

AFRICA – Soup

West African Peanut Soup – I added only 4 cups of vegetable broth and 1 can of coconut milk, halved the ginger, and used spinach instead of greens.

Served with chopped peanuts, parsley and a cherry tomato slice.

AUSTRALIA – Vegetable

Garlic Hasselback Zucchini  – without the Parmesan

Served with Macadamia Nut Sauce – (I had the coconut oil but forgot and used olive oil, shallots instead of the green onions, and vegetable bouillon) with diced tomatoes.

Served on red holiday doilies and made flag picks from printed paper glued onto toothpicks. I made a choice to use the St Andrew’s Cross or the Saltire flag.

NORTH AMERICA – Dessert Trio

Santa Cheesecake – I made these mini cheesecakes. I used this photo as a guide to decorate them.

3D Reindeer Cookie – homemade sugar cookies cut with a 3D cookie cutter, frosted with Caramel Buttercream – I did not exactly follow this recipe, I used butter, powdered sugar, and some Trader Joe’s Caramel sauce.

North Pole Chocolate Cake – boxed cake mix with a layer of homemade strawberry jam from my friend Kathy, whipped cream on top and a Chocolate Hazelnut Pirouette cookie (to stand in for the North Pole – I wanted a red and white peppermint one but difficult to find and I decided not to make my own.)

Served with Chocolate Ho Ho’s – melted chocolate chips piped into letter shapes (the day before) onto aluminum foil and kept in the refrigerator.

Santa Themed Dessert Trio

My critique of the meal:

I know that my 7 Continent Dinner Rotating Earth Menu could have been more exact since when they turn, it is not always exactly lined up.

I have been making gyoza since I was 19 so they were not new to me. My Dad enjoys Trader Joe’s Gyoza Dipping Sauce so I served that instead of making my own.

My guests raved about the West African Peanut Soup. I think that it will go on my regular soup rotation.

This was my first time making Hasselback Zucchini. It was enjoyed by all and I would make it again.

It was my first time making blueberry and blackberry sorbet. I prefer other types but it suited the purpose of this meal. Scooping ahead and keeping in the freezer was very helpful.

My empanadas were cracked and not folded properly but I did not take the time to learn how (it was my first time making them). I would use a different pastry next time. The filling was delicious!

I am not sure how much my guests liked the dried figs but the cheese course and salted truffled almonds were a hit! I had a consult at the Pittsford Wegmans cheese counter a few weeks before and they were extremely helpful with planning the course.

My theme for the dessert trio was “Elegant Santa”. My reindeer cookie is not elegant – she is sort of rustic. A peppermint striped Pirouette cookie would have been more suitable for the North Pole. But I think that my guests were impressed. I did hear some sounds of surprise and awe when I put out the dessert trio.

I am being overly critical since I think the meal was a huge success!

Christmas Breakfast 2018

Traditional Pig Christmas Breakfast

My family says that I seldom make the same food again (not true!). I have a traditional Christmas breakfast that is enjoyed by all. In 2016, I was too emotional to make my traditional breakfast the first Christmas without my ex (he loved this breakfast). So, in 2016, I made a different breakfast for my family. In 2017, I made the traditional breakfast for my parents and Dennis but did not make the pig shapes for some reason (the scones were round). Yesterday, I made our traditional breakfast. The only difference was I made cranberry butter instead of shaped butter. My friend Dennis, joined my parents and myself for a delicious meal. My parents were happy to get the pig shaped scones back this year. I guess that Christmas is not the same without pig shaped scones.

Three Little Pigs Gingerbread

3 Little Pigs Gingerbread Houses

I made these Three Little Pigs gingerbread houses with my co-worker Angie and her 2.5 year old daughter. It was so much fun and I was impressed with how involved her daughter was with our project. Of course she was excited by the candy but she also enjoyed making the houses. She attached the windows, put all of the legs on the pigs, and assisted with other decorations. The theme was her idea since she loved the Three Little Pigs houses that we saw at the Eastman House Sweet Creations exhibit.

Gingerbread Recipe: I used this recipe.

Royal Icing Recipe: I love using this recipe which uses Meringue Powder. It hardens fast and works very well.

Brick House: Bricks – Twizzlers Cherry Nibs, Door – Hershey Miniature, Roof – Andes Candies, Windows – Pretzel Snaps

Stick House: Sticks – pretzel sticks, Door – Hershey Miniature, Windows – pretzel snaps

Straw House: Shredded Wheat (crumbled and whole)

Pigs: Large marshmallows – dyed pink, nose – small marshmallows dyed pink and pink royal icing details, ears – pink royal icing, eyes – melted chocolate, legs – pretzel sticks. Inspired by this.

Wolf: Large marshmallow – dipped in melted chocolate chips, ears – marshmallows dipped in melted chocolate chips, eyes – white royal icing, legs – mini chocolate dipped marshmallows. Inspired by this.

Little Blue Gingerbread House

Small Blue Gingerbread House on Cake Stand

I made this small blue gingerbread house to practice techniques. The following techniques were new to me: flooding with royal icing, lights, decorative edging on the seams, open door, and gelatin windows attached with melted sugar. It was also new to put my gingerbread house on a Styrofoam base and cake stand. I think that it looks cute!

Gingerbread house: I used this template.

Gingerbread Recipe: I used this recipe.

Royal Icing Recipe: I love using this recipe which uses Meringue Powder. It hardens fast and works very well.

Roof: Mini Snow-Caps

Walls: Flooded with blue Royal Icing. I used a lot of blue gel coloring and it was still light. I need more practice with this technique but I like the look of it.

Windows: Silver decorating balls around windows attached with Royal Icing, I melted some sugar and attached the gelatin sheet with the hot caramel. (I tried this because I attached the Depot windows with Royal Icing and it only held for a few weeks.)

Doors: White Royal Icing covered with blue sanding sugar

Birds: Wilton sugar birds

Lights: Battery operated LED star lights

Tree: Ice cream cone covered with Royal Icing and large blue sugar pieces

2 Candy Cane Themed Meals

I decided to join them and my first brooch of the season is a candy cane brooch. I have a different brooch to wear after Christmas. I am not exactly sure why, but wearing a brooch on my winter coat makes me happy.

Gingerbread Train Depot and Santa Train

For the second year in a row, I entered a gingerbread house in Sweet Creations at the Eastman Museum. I am not exactly sure how I was inspired to make this Santa train and train station but I was looking for something more traditional for Christmas. It involved a lot more planning and hands-on work than my past gingerbread houses. Since I currently live alone, I was more comfortable having extra hands during crucial construction moments. I am thankful that so many of my friends came over to help during the two weekends I worked on this. I was thrilled to have such a large project occupy my time and missed it when it was over. I even used a photo of it as my holiday card this year.

Vegetarian Thanksgiving

My Mom and I prepared a Vegetarian Thanksgiving this year in Delmar, NY. It had been awhile since we did this and is my first time to share it here. My Mom outdid herself with the gorgeous decorations and table. My friend Carol and I drove the 3.5 hours to the Albany, NY area on the morning of Thanksgiving since I am a morning person, more alert to drive first thing and to avoid traffic. We mostly had the roads to ourselves!

Wednesday night I prepared the cornucopia bread and apple walnut chutney at my home and brought it with me. My Mom made the pumpkin soup (reserving the cream until just before serving) and my parents made the Cranberry Cheesecake. Everything else we made on Thanksgiving. It was a much easier meal than I remember making in the past. The Vegetable Wellington was a huge hit! I had made others in the past but the homemade pesto, goat cheese, and Citrus Beurre Blanc sauce brought it over the top! If you love sour, you will love this.

1st Course: Cornucopia bread (I did not use the egg) with raw vegetables (Cauliflower, Broccoli, Sugar Snap Peas, Baby carrots, Radish) and Blue Cheese Dip (we did not serve nuts with it)

2nd Course: Pumpkin Soup served in small carved pumpkins (we did not heat the pumpkins), Mini Sage Cheddar Biscuits with Apple Walnut Chutney

3rd Course: Vegetable Wellington (I used frozen Puffed Pastry and did not use mushrooms or eggplant), served with Citrus Beurre Blanc sauce (recipe at the bottom).

4th Course: No Bake Cranberry Cheesecake served with fresh whipped cream

My critique of the meal: I liked starting with a light first course. Everyone enjoyed the vegetables with blue cheese dip. The small pumpkins were a fun way to serve the pumpkin soup. The Vegetable Wellington with sauce was amazing. A real keeper and will be made again. It can be done with different vegetables if desired. The dessert was delicious but difficult to get out of the pan, so we basically ate it without a bottom crust. Next time we will not follow the directions and spray the pan with cooking spray. If I was to change anything besides not having the cheesecake crust stick, it would be the biscuits. I don’t think we needed the sage in the biscuits and the cheddar was not very noticeable. But we liked the apple chutney and the biscuits were flaky and delicious. This was a memorable Thanksgiving meal!

My critique of the meal: My niece suggested that next time I should use an apple skin cut in a decorative shape on top of the cheesecake. It would make it more attractive. I loved the apple cheddar tarts so much that I expect to make them again soon. Also, maybe another time I will make larger individual tarts.

My friend Carol and I enjoyed this Halloween dinner. She made the beautiful arrangement.

Ghost Salad – I turned this into a ghost salad by cutting apples with a small ghost cookie cutter, this salad with maple dressing is a family favorite

Black Bean Spider Web over Cheddar Sweet Potatoes – in a food processor, puree black beans with a little olive oil, bake one sweet potato (per person) until tender, remove skin and mash sweet potato with butter and shredded cheddar cheese, put sweet potato mixture in individual oven safe dish, put pureed black beans in a ziplock bag, snip off a small corner, pipe a spider web pattern over the mashed sweet potatoes. Bake at 375 for about 20 minutes or until heated through.

Jack-o-Lantern Orange with Fruit – cut top off of orange, use a spoon to scoop out the orange segments, add grapes, berries or fruit of your choice. We ate grapes.

My critique of the meal: I would not change anything if I wanted a relatively healthy meal. I was very pleased with the look and flavor of the spider web sweet potatoes. If I wanted a non-fruit dessert, I would serve ice cream in the jack-o-lantern oranges.

3 Leaf Themed Lunches

I made this for my 19 year old niece when she stayed with me in June. It is a fun autumn themed meal that I gave her in the summer since I like to work ahead.

Pineapple Meal

I made this pineapple featured ingredient meal for my parents and myself while at their Lake House for a weekend. I have made this rice recipe many times with my friend Dennis. It looks different this time since my Mom only had Japanese sticky rice and I used what she had in her pantry. But it was enjoyed by all.

Giraffe Themed Lunches

Giraffes for Lunch

This lunch is in celebration of Giraffe’s returning to the Seneca Park Zoo. (I was told that they once had visiting giraffes but it was before my time in Rochester.) I made this snack lunch for myself on a day that Carol and I went on a Habitat garden tour. It was my first time adding details to only part of a homemade tortilla chip. (I did the same with Carol’s zebra tortilla chips that I published earlier this week.) This may not look like much but the hummus, tortilla chips, and nuts make this meal over 400 calories.

Square Container: Macadamia nuts, giraffe tortilla chips – cut flour tortillas with a cookie cutter, place on cookie sheet sprayed with cooking spray, spray shapes with cooking spray, sprinkle with paprika in spots (I used the end of a straw) and bake in a 350 degree oven for about 10 minutes or until lightly browned and crisp, green grapes, sugar snap peas

Zebra Themed Lunches

Today I am featuring zebra lunches in celebration of the new addition of zebras at the Seneca Park Zoo. The Animals of the Savana expansion is beautiful. I visited it on Saturday morning.

Top Left: Zebra – apple (cut with a cookie cutter), melted chocolate piped with a ziplock bag, blueberries

Bottom Left: Pistachios

Right Side: Zebra – hot cooked Nishiki rice pressed into a cookie cutter with plastic wrap, black beans (I used my food processor to puree black beans with some olive oil, onion powder and a splash of lemon juice), then I piped the black beans in stripes with a Ziploc bag with a small tip cut off, assorted lettuce

Savory and Sweet Crepes for Dinner

Crepes and Salad Dinner

Recently I had my 19 year old niece over for dinner. I asked her what she wanted and she said crepes. When she got here, I told her that she might be disappointed but not surprised that I tried new types of crepe filling. I am known for trying new recipes.

Broccoli and Cheddar Crepes – My crepe batter is similar to this. Boil broccoli florets in water for a few minutes, then drain. Put shredded cheddar and broccoli in a crepe and fold. Place crepes in a baking pan coated with cooking spray. Add shredded cheese on top of crepes. Bake at 375 for about 20 minutes or until brown.

Salad – I took the easy route and it was salad from a bag. My niece had ranch dressing and I had Italian.

Roasted Blueberry and Rhubarb Crepes with Honey and Greek Yogurt – I used frozen rhubarb that I thawed in my refrigerator overnight. I drained it well before roasting.

My critique of the meal: The broccoli crepes were very good but I prefer the asparagus crepes since they seem more special. I liked the roasted rhubarb and blueberries and think it would be great over vanilla ice cream with whipped cream.

Penguin Rice Lunch

I made this lunch for my friend Dennis on a day that we met at the zoo. I happened to find gigantic blueberries at Wegmans. They were a fun addition to this meal.

Pelican Bento Lunch

I made this Pelican themed lunch for my Mom. She was excited that I threaded the fishing line on the pole (I used a toothpick). Both of my parents remembered the family history surrounding my choice of theme. When I was 6, my parents, my sister, and I joined my Grandparents who had their motor home in the Florida Keys that winter. A few memorable things happened during that trip. My sister’s beloved boy doll, “Timothy Ketchup”, fell into the water. She screamed, my Grandma thought one of us fell in but it was Timothy. My Dad was able to save him. Timothy was memorable since he was anatomically correct and wet his diaper. The second memorable thing was a pelican somehow grabbed a fish that was still attached to our fishing pole. I remember it flying with the fishing pole dangling. It did not get far before it dropped it.
