I made this lunch for my co-worker Angie. It is supposed to be a vegetable rainbow with a black olive and corn pot of gold.
Left Side: Rainbow – red bell pepper, carrots, yellow bell pepper, broccoli, blue potato (cooked), over Parmesan rice. Pot of Gold – black olive with corn, pecans
Top Right: Pistachio nuts
Bottom Right: Clementines dipped in melted chocolate chips
