I made this lunch for my friend Carol on a day that we met at her house and then went out shopping. I enjoy coming up with new ideas for my Vegetable Potato Salad series.
Left Side: Cheddar cheese, red bell pepper, purple potato (cut with flower cookie cutters), over a homemade pesto with lemon juice
Top Right: Toasted walnuts
Bottom Right: Melon and pineapple flowers (cut with a cookie cutter), dried blueberry centers held on with dried spaghetti (it gets soft from the moisture in the fruit)
