I will start by saying that although this lunch was delicious, I do not consider it successful since the tart is strange looking. In concept it was beautiful, but what is in my mind or on paper does not always translate into cute food. Anyway, I made this for my coworker Angie and she enjoyed it. I pretty much ate the same for lunch that day and it was delicious but a LOT of food.

Contents: Beach – homemade pie crust, ricotta cheese, Boursin herbed cheese, garlic powder, extra sharp cheddar and a lot of freshly ground cracked pepper, Shells – carrot and zucchini (cut with mini cutters), Ocean – shredded purple carrot, Mermaid – zucchini (cut with a cookie cutter). I baked it in a rectangular tart pan. The beach tart was inspired by this.
