I made this potato and vegetable themed potato salad for myself to celebrate 4th of July on this blog. Yes, my flag stripes are a little bit wonky but I am guessing that this meal will end up being one of my favorites for 2018. The whole thing makes me smile and it was delicious!

Left Side: White Stars – cheddar cheese, Blue Stars – blue potato (cut with cookie cutter and cook until tender but not falling apart), Red Stars – red bell pepper, on top of a light layer of Dijon vinaigrette – Dijon mustard, olive oil, white wine vinegar, salt and pepper
Top Right: Pistachios – USA drawn with food safe markers
Bottom Right: American Flag – blueberries, strawberry jam put in a plastic Ziploc bag, cut off small part of corner and pipe on stripes, plain Greek yogurt
