A few weeks ago, I met my parents in Utica, NY to celebrate my birthday. It was a wonderful day! We toured the Parker F. Scripture Botanical Gardens, went to the Utica Zoo, and had an amazing dinner at The Willows of Utica. I made these salad terrarium lunches in mason jars for the three of us.
Fox Terrarium Salad: Fox – carrot (cut with a cookie cutter), cashews, fresh spinach, lentils, red bell pepper, chopped celery and carrots, Vinaigrette – fresh squeezed lemon juice, a splash of olive oil, freshly ground black pepper in Mini Dippers
Black Sheep Terrarium Salad: Sheep – purple carrot (cut with a cookie cutter), walnuts alpha sprouts, fresh spinach, mini fresh mozzarella balls, lentils, chopped celery and carrots, Vinaigrette – fresh squeezed lemon juice, a splash of olive oil, freshly ground black pepper in Mini Dippers
Butterfly Terrarium Salad: Butterflies – thinly sliced carrot cut with a paper punch, mini fresh mozzarella balls, fresh spinach, garbanzo beans, chopped celery and carrots, Vinaigrette – fresh squeezed lemon juice, a splash of olive oil, freshly ground black pepper in Mini Dippers
Fruit: Watermelon, Feta, Pistachio nuts
I loved planning and making these and we all enjoyed eating them. I expect that there will be more terrarium salad lunches in the future. In the past, I made this terrarium meal.
