Today is “Eat Your Vegetables Day“. I decided to eat and photograph vegetables as part of every meal and snack. I am a vegetarian but ate vegan all day in celebration of Eat Your Vegetables Day.
Vegetable: Golden Beets roasted with a little olive oil and thyme
Main: Cold Peanut Noodles with cucumber and cherry tomatoes
For part of breakfast I had Vegan Carrot Cake Muffins. I used white flour and substituted dried blueberries for the raisins.

For dinner I made homemade pizza dough and topped it with seasoned black beans and zucchini lattice.
