Since I am always looking for new ways to serve salsa rice, I made this M&M themed lunch for my nephew. Please let me know if you have any ideas for other themed lunches with salsa rice.

Top Left: M&M – cooked hot Nishiki rice mixed with a little salsa and packed into a round cookie cutter (used plastic wrap between my fingers and the rice), M cut from a fresh spinach leaf with a cookie cutter, black beans and salsa
