Each day this week I will feature lunches I made for my niece during her last days in high school. She became my niece just after she graduated from kindergarten when I married her uncle. She will graduate on Saturday. During the month of May, each week I made a special meal for her to bring to school. It was my way of showing love with food and connecting with my niece.

Today I have Cheddar mashed potatoes in the shape of a panda. It would be easy to make with leftovers from dinner.
