Here is another featured ingredient lunch. I made this for my 10 year old nephew. He was not a fan of the maple vinaigrette but I liked it. I had house guests for breakfast the same morning and served them the apple muffins as part of their breakfast. A planned leftover muffin made this an easy lunch.
