I made this lunch in honor of Eric Carle’s birthday. I liked the idea of “The Tiny Seed” themed lunch but I had never read the book. I borrowed “The Tiny Seed” from the library to prepare. A majority of my lunches are created for loved ones but I actually ate this one on an outing with my 12 year old nephew.
I added leaves and butterflies as sides for this lunch because I was inspired by the following quotes::
“All summer long the birds and bees and butterflies come visiting.”
“And the wind carries yellow and red leaves past the flower.”
Container: EasyLunchBoxes
Leaves: Carrot, cucumber, and radish
Butterflies: Apples
Background: Couscous with Trader Joe’s Dried Baby Sweet Pineapple and sunflower seeds.
Flower: Flour tortilla painted with food coloring and baked until lightly brown and crisp
