Vegetable Wellington with Roasted Garlic Carrots

Tuesday was Carol’s birthday so I had her over for a birthday meal. The wellington is a favorite and I have made it for many Thanksgivings and Carol’s birthdays. This year I served it with spiralized carrots to add something different. Since it was a worknight I kept the meal easy and bought dessert and flowers at Wegmans. The centerpiece also served as a gift for Carol.

Vegetable Wellington (I used frozen Puffed Pastry and for vegetables used zucchini, red bell pepper, and asparagus), served with Citrus Beurre Blanc sauce (recipe at the bottom)

Roasted Garlic Parmesan Carrots – I used my spiralizer and rainbow carrots
