Awhile ago, I had my friend Mark over for a vegan, gluten free lunch. I mostly followed this recipe but reduced the number of green onions and did not use thyme. It was visually appealing and delicious. The only thing I would change if I made this again would be to make sure my avocado are ripe enough.
