In May, I went alone to Iceland for a few days. It was a time of transition (leaving one job and starting a new one) so I planned a last minute adventure to a new place. It was fantastic! Iceland was beautiful and it was easy to find delicious and interesting vegetarian food. I am glad that I made the time to travel alone to a new country.
I made this lunch for myself after I returned home.
Left Side: Puffin – mashed potatoes cooled then shaped by hand, black olive, orange cheddar, black beans pureed in a food processor with lemon juice, sauteed zucchini
Top Right: Sheep – black olive and cauliflower, spinach leaves
Bottom Right: Whale tail – apple – dipped in water and lemon juice to prevent browning, blueberries
This was the Vegetarian Set menu from the Lava Restaurant at the Blue Lagoon. I loved the meal and setting! I want to try to recreate the cauliflower dish.
