This year I have 4 fun Halloween lunches to share. I made all of them for my husband.
The first one is a candy corn themed mashed potato (the mashed potato cake is under the cheese).
Left Side: Mashed potato cake (cooled mashed potatoes cut with a candy corn cookie cutter), white Cheddar, orange Cheddar, and white Cheddar with a mixture of yellow food coloring and water brushed on, each cut with the same candy corn cookie cutter, cooked asparagus
Top Right: Reese’s Pieces
Bottom Right: Applesauce with cinnamon
This ghostly rice meal is prepared to be heated in the microwave. The cold sides are in silicone cups for easy removing before microwaving.
Left Side: Ghost rice – hot cooked Nishiki rice pressed into a cookie cutter with plastic wrap, cooked zucchini
Top Right: Raspberries
Bottom Right: Carrots in pumpkin shaped silicone cup
This Jack-o-lantern is made from cooked cheese mashed potatoes and cut with a cookie cutter.
Left Side: Jack-o-lantern – cheese mashed potatoes with orange Cheddar cut with a cookie cutter, face details – raw spinach cut with cookie cutters, cooked zucchini
Top Right: Raw green beans
Bottom Right: Pineapple and blueberries
The meal was very easy but has a whimsical element of surprise.
Left Side: Charlie Brown flexible pick, romaine, cherry tomatoes, hard boiled egg, mozzarella cheese (ranch dip not in photo)
Top Right: Peaches
Bottom Right: Halloween themed chips from Trader Joe’s
