Yesterday was my niece’s birthday – she turned 17, so I made this birthday cake rice bento lunch for her. I think that the vegetables around the rice look like confetti.
Left Side: Birthday cake – cooked Nishiki rice packed in a round cookie cutter by pushing down with plastic wrap (then remove cutter), spinach details (used a small round cookie cutter and cut each piece in half), sauteed mini sweet pepper rings and zucchini in vegetable broth
Top Right: Kiwi
Bottom Right: Homemade trail mix – Rice Chex cereal, dark chocolate M&M’s, dried blueberries, almonds, walnuts, mini pretzels
