My 15 year old niece requested this lunch. She wanted a main course pie and pie for dessert. I love getting food requests and enjoyed making this meal. My husband had it for dinner the night before and this meal was planned leftovers for lunch.

My husband and niece loved this zucchini and cheese pie with potato crust. Since I am particular about eggs in things, I liked that this does not use eggs. Most similar recipes call for eggs.
