Potato Skin Lunch

A few months ago we attended a wedding with food stations. One of the stations had build your own potato skins. It was so much fun that it inspired this lunch. There are so many possibilities for this that I see another potato skin lunch in my future. Next time I will probably add shredded cheese.

Container: EasyLunchBoxes

Fruit: Grapefruit

Nuts & Vegetable: Toasted pecans and sugar snap peas

Potatoes: Baked russet potatoes with some potato scooped out, cooked broccoli (there are four potato halves in this lunch)

Salsa & Sour Cream: In Mini Dippers
