This was a fast bento to make because it was entirely made from dinner leftovers. I was not very fond of the pasta recipe but it was good enough to eat as leftovers for lunch.

Vegetable: Asparagus with toasted hazlenuts, a little lemon juice, salt and pepper
Fruit: Blackberries
Pasta: Pasta with Grilled Artichokes (I roasted the artichokes instead of grilling)
I “doctor” pasta with herbs– basil, most particularly. And tarragon, depending on what is in the garden at the moment. I love this combination and will think of this as a lovely summer lunch idea!

I love artichokes! Did you roast fresh ones for this? The asparagus and hazelnuts look delicious too – two more of my faves!
Yes I roasted fresh ones but I did not have experience working with fresh artichokes.
I often steam them and then dip the leaves in melted butter and/or mayonnaise but have never tried roasting them. I think I would like them that way though.
I love eating roasted vegetables.
