Bagels with Elephant Salad

Last weekend, my 24 year old niece came over for lunch and a visit. It was delightful to catch up and give her a tour of my house.

Left Side: Elephants – Bell pepper and cucumber cut with a cookie cutter, romaine, Tortilla chips – cut flour tortilla with cookie cutter, brush with olive oil, sprinkled with salt – bake in 375 over for about 10 minutes,

Top Right: Pistachio nuts

Bottom Right: Poppy Seed Bagels 

Mini Dippers: Raspberry Vinaigrette – I didn’t use the raw onion
