Picnic Lunch

Cottage Cheese Potato Salad Lunch

I made lunches for a new companion Dennis and myself. His work is not far from mine so we met for lunch at a park along the Erie Canal. You can see both lunches in the last photo. I think it is funny since I told him to sit there and not eat yet so I could take a photo of both lunches. It is not the most natural photo but it makes me laugh. The lunches are basically the same but the fruit and nuts are different because I used up what I had left in my kitchen. It is natural for me to make food for the people in my life and it is special to have a new person to eat my meals.

Container: EasyLunchBoxes

Left Side: Cherry tomatoes, chickpeas, olive oil, feta, salt and pepper, spinach leaves (underneath), potato salad (instead of mayonnaise, this recipe uses a dressing that contains cottage cheese and milk)

Top Right: Walnuts, (the other lunch had cashews)

Bottom Right: Blueberries, (the other lunch had Rainier Cherries)
