Today I have two different lunches that feature sun-dried tomatoes. I love food with sun-dried tomatoes but my husband does not. So it is the perfect lunch for me.
This first lunch is a fun snack type lunch with a dip.

Bottom Right: Marinated Mozzarella
I love pasta and leftover pasta and find it particularly satisfying for lunch.

Right Side: Penne pasta with sundried tomatoes and herbs, sautéed spinach with a little bit of vegetable broth, toasted pine nuts
