My Mom is a big fan of artichoke hearts but since my Dad’s affection for them is not a great she does not eat them as often as she would like. When I found out about Artichoke Heart Day of course I decided to make a meal for my Mom (my Dad and husband also actually liked it). I did not photograph the dessert we had that night but it was peach cobbler with vanilla ice cream.
Garlic Bread – Wegmans frozen garlic bread
Easy Artichoke Gratin – (We used Cheddar instead of Gruyere) This really was easy and delicious!
Chopped Salad – We cut grape tomatoes, cucumbers, red bell pepper and added fresh parsley and a drizzle of fresh squeezed lemon, some white wine vinegar, a little olive oil, Dijon mustard, salt and pepper (combined).
This was an easy weeknight meal that we all agreed would eat again.
