This was an tasty dinner turned into delicious leftovers for lunch. I love eggplant but my husband doesn’t so I had this for dinner with my parents when he was working. I put the fruit in a silicone cup so it would be easy to heat up this lunch in a microwave. I like the texture of fresh mozzarella melted but I know that some people don’t.

Pasta: Spaghetti Alla Norma – I followed the recipe for this one except that I used Angel Hair pasta. This is a family favorite that I have made many times over the years.
