For a long time I loved the idea of making a vegetarian salad in a pasta shell. I finally made one. I don’t use avocados very often but I enjoy them. They are delicious in this filling meal.
Container: EasyLunchBoxes
Background: Spinach
Shells: I mostly followed this recipe but I used pistachio instead of walnuts because I had some leftover from another meal. I used chives from my Mom’s herb garden.
Vegetable: Radish
Fruit: Green grapes
