For this bento I used two recipes (Cucumber Feta Salad and Pine Nut Quinoa) from the Cooking with Trader Joe’s Cookbook: Easy Lunch Boxes by Kelly Lester. The Cucumber Feta Salad is on page 192. I basically followed the recipe but used large tomatoes instead of cherry or grape. I also omitted the parsley and did not put garlic in the dressing. The Pine Nut Quinoa recipe is on page 164. The only change I made to the recipe was I used Near East Quinoa Blend with Roasted Red Pepper & Basil. I had it in my pantry because I wanted to try it. I prefer regular quinoa.
The recipes were great and this meal was filling.
