Beets and Cauliflower for Dinner

I had my friend Carol over for dinner and since she will actually eat beets, I was excited to make a new beet recipe I found. It was easy, attractive, delicious, and filling. A definite keeper!

Beet Tower Salad – I used toasted walnuts instead of hazelnuts since I had them in my pantry.

Cauliflower Cakes – I did not have cashew butter so I used peanut butter.

Strawberries & Grapes with a splash of Fragola (Wild Miniature Strawberry Liqueur),

My critique of the meal: The beet stacks were amazing on so many levels. I would make them again. It was my second time to make the cauliflower patties but the previous time I made them with cashew butter and liked them better.

    I love beets – we grow them every year! I had that salad at a great little restaurant in Bucerias, Mexico years ago – delicious!!
