Easter Meal 2020 Virtual

I am social distancing due to the Coronavirus. It was my first year to be alone for Easter. I was still able to enjoy good food and company while celebrating the holiday. I even set my table and wore a dress.

Yesterday, my Mom and I dyed Easter eggs together on video. Today, I made and delivered an Easter meal to my friend Carol (she lives 2 miles away). When I arrived at her home, the beautiful daffodils from her garden were waiting for me in a box outside. I left her a box of food in it’s place. I drove home and then we ate the meal together on video.

Menu

  • Smashed Peas with Whipped Ricotta on homemade French Bread – I did not crisp the bread.
  • Asparagus Soup with Lemon Sour Cream – fresh lemon zest mixed with sour cream
  • Roasted Carrots with Pistachios – I added pistachios after roasting.
  • Individual Easter Peanut Butter Pie – I made it festive by putting an small chocolate chick in it. I am glad that my Instacart shopper was able to get the cute chocolate chicks this week.

It felt very normal to make food for a holiday and I thoroughly enjoyed cooking today. But it is not normal for my family to have an Easter meal at home. We have a tradition of going to a nice restaurant for a buffet meal. My parents and sister actually started the tradition without me when I was 12 and flew to see my Grandparents in Florida one Easter.

My critique of the meal: The food was delicious. It was my third time making the asparagus soup. It was my first time making everything else except for the french bread. If I were to change anything, I would put labels on the containers for Carol. I wanted things to be fresh so gave her many small containers and ended up giving her 3 containers with white stuff (sour cream with lemon zest, whipped ricotta, whipped cream). I think that virtual meals are a good alternative especially when you can share the same food. I would recommend it and do it again.
