7 Meatless Meals

Here are 7 meatless meals that I made for lunch and dinner for my husband and myself. They all feature plenty of fresh fruit and vegetables. One has potatoes, 3 feature rice, 1 has quinoa, and 2 has pasta. All of these were packed in my EasyLunchBoxes.

I made this meal for myself. I enjoyed eating the flower shaped rice ball. It was very easy to make and more satisfying than a scoop of rice.

Right Side: Onigiri (cooked Nishiki rice ball), sauteed spinach with a little soy sauce and sesame seeds, cherry tomatoes

Cauliflower Pistachio Pasta Lunch

This is another meal I made for myself with ingredients I had in the house.

Left Side: Penne, cauliflower, pistachio nuts, green bell pepper, salt, pepper, little olive oil

Top Right: Watermelon

Bottom Right: Cherry tomatoes, black olives, mozzarella balls, basil

Onigiri trio with vegetable medley

I made this meal for husband to heat up in the microwave on a night he came home late for dinner. I put the grapefruit and cashews in silicone cups so he could easily remove them before heating up the rest of this meal.

Pasta Broccoli Feta lunch

Since I love pasta and feta cheese, I made this dinner for myself.

Pasta Potato Fruit Salads for lunch

This was a cold supper I made for my husband to eat when he came home. I made the potato salad to his specifications.

Quinoa Salad for Lunch

I made 2 of these exactly the same for my sister-in-law when we met at the zoo. She brought her 3 boys and I brought 2 nephews. I also made lunches for the 5 boys but I blogged them separately.

Rice ball zucchini lunch

This is another meal I made for my husband to heat up when he came home. The cashews and grapefruit are in silicone cups so he could easily remove them before heating the rest in the microwave.
