Here are 7 meatless meals that I made for lunch and dinner for my husband and myself. They all feature plenty of fresh fruit and vegetables. One has potatoes, 3 feature rice, 1 has quinoa, and 2 has pasta. All of these were packed in my EasyLunchBoxes.
I made this meal for myself. I enjoyed eating the flower shaped rice ball. It was very easy to make and more satisfying than a scoop of rice.

I made this meal for husband to heat up in the microwave on a night he came home late for dinner. I put the grapefruit and cashews in silicone cups so he could easily remove them before heating up the rest of this meal.

Since I love pasta and feta cheese, I made this dinner for myself.

I made 2 of these exactly the same for my sister-in-law when we met at the zoo. She brought her 3 boys and I brought 2 nephews. I also made lunches for the 5 boys but I blogged them separately.
