I made this lunch for my husband. In this case it was a planned lunch but also became dinner the night before.

Potato: Twice baked potato riced with a little butter, milk, Mexican cheese blend, salt, pepper, and cooked broccoli
Fruit: Green grapes
Cookie: Coconut Balls
Ranch Dressing: (Not pictured) in Mini Dippers
Gosh….your twice baked potato looks yummy!! May I know need to take how long to baked the potato?
I made this the night before. I baked the potato for one hour or until a fork goes in easy. Then I scooped out the potato, put through a ricer, or you can mash and add whatever you want. Then put back in the potato and bake until heated through or until cheese on top is melted.
