I made this for my 8 year old nephew. It was a simple and quick lunch assembled from breakfast leftovers (I added the pistachios for protein and crunch). It was not a cute lunch but my nephew thought it was delicious.
Fruit: raspberries
Protein: pistachio nuts
Starch: homemade mini sesame bagels with homemade apricot jam
I’m in agreement with our nephew – I ‘m sure it was yummy especially with your apricot jam!

I love the idea of homemaking bagels, might have to try it sometime! It might not be cute, but it still looks delicious!
