I continue to be interested in the idea of breakfast for lunch. I made this breakfast bento for my husband to take for lunch. He enjoyed this meal!
Container: EasyLunchBoxes
Fruit: Grapefruit with mint sugar (I put some fresh mint and sugar in a food processor)
Yogurt: Wegmans Vanilla Maple yogurt (maple leaf sprinkle)
Bread: Fruit-Nut Breakfast Bread (I substituted dried blueberries and cherries for the dates and did not use the glaze) It was a quick and easy recipe. My husband liked it, I thought that there was too much fruit in it.
Potatoes: Diced potatoes with salt and pepper – roasted in butter. I added fresh Parmesan cheese on top after they were done.
